- Guillaume is a lecturer in Administrative Law in the Bachelor of Laws program at Université Laval. He also teaches a course on the sustainable development of the territory since 2025.
- He has appeared before nearly a dozen administrative tribunals and all the Quebec courts, including the Court of Appeal.
