- Guillaume is a lecturer in Administrative Law in the Bachelor of Laws program at Université Laval. He also teaches a course on the sustainable development of the territory since 2025.
- He has appeared before nearly a dozen administrative tribunals and all the Quebec courts, including the Court of Appeal.

- Guillaume has been a member of the Board of Directors of the Caisse Desjardins de Sainte-Foy since December 2024.
- He served for three years on the Board of Directors of the Jeune Barreau de Québec, where he was responsible for the public affairs committee and other committees.
